Chorizo Penne

Serves 4

Ingredients

  • 350g dried penne
  • 250g chorizo sausage (we use the thinly already sliced to speed up the time)
  • 1 tbsp of olive oil
  • 2 shallots finely chopped
  • 2 tbsp sherry vinegar
  • 125ml whipping cream or crème fraiche

Step by Step Instructions

Step 1

Bring a large saucepan of salted water to the boil. Add your penne pasta and cook according to the instructions. 

Step 2

Whilst the pasta cooks slice the shallots and chorizo into thin slices.

Step 3

Heat a frying pan with one tablespoon of olive oil. Add the shallots and cook over medium heat for 2 minutes to soften. Add the chorizo and cook over high heat for 2 minutes until it releases oil. Add the sherry vinegar and cook for a further minute over high heat. Add the cream and stir.

Step 4

Drain the pasta and pour over the chorizo sauce. Serve into warm bowls adding grated parmesan and fresh rocket for extra flavour.
