Yorkshire Pasta Creamy White Wine & Pesto Prawns

Creamy White Wine Pesto Prawn Yorkshire Pasta

Ingredients

  • 300g of Yorkshire Pasta Tortiglioni
  • 165g ready to eat prawns
  • 1 Large Red Onion
  • 1/2 Fresh Chilli
  • 2 Cloves of Garlic
  • 40ml White Wine
  • 80g Red Pesto
  • 15 Baby Plum Tomatoes
  • 1/2 Red Pepper
  • 150ml Single or Double Cream
  • Sprinkle of Cheddar Cheese
  • Salt and Pepper
  • Lemon Juice
  • Olive Oil

Step by Step Instructions

Step 1

Cook Yorkshire Pasta according to instruction on reverse of pack.

Step 2

Dice your onions, garlic, chilli and pepper.

Step 3

Heat a drizzle of olive oil in a pan and add onion, garlic and chilli, fry for 2-3 minutes on a high heat.

Step 4

Add 40ml white wine to frying pan and simmer for 3 minute, allowing the alcohol evaporate.

Step 5

Slice the baby plum tomatoes in half. Add the tomatoes & prawns to the frying pan and leave for 4 minutes.

Step 6

Add the cream, 3/4 pesto and a splash of lemon juice, season well with salt and pepper. Finally, drain the pasta, stir in remaining pesto, serve the prawns on top and finish with sprinkled cheese and black pepper. Enjoy!
