Saint John’s Yorkshire Pasta Pudding
In Ibiza this dessert is synonymous with the mid-summer celebration of Sant Joan at the end of June. It’s a pasta version of rice pudding and is delicious!!
Ingredients
- 100g Tortiglioni Yorkshire Pasta
- 2 cups of single cream
- 1 tsp cinnamon powder
- zest of 1/2 lemon
- 150g caster sugar
- 100g @yorkshirepasta
- dark chocolate
Step by Step Instructions
Step 1
Gently warm the cream in a saucepan over a medium to low heat
Step 2
Add the cinnamon, lemon zest and sugar and simmer
Step 3
Meanwhile cook pasta in salted water for only 2-3 mins (still raw inside)
Step 4
Drain the pasta then add to the simmering cream mix
Step 5
Cook for 6-8 mins until the pasta is al dente
Step 6
Evenly divide the mix into ramekins or bowls and let cool
Step 7
Cover and refrigerate for at least 4 hours (overnight if possible)
Step 8
Serve cold with a grating of dark chocolate
