Ingredients
- 2 medium sized avocados
- Glug of olive oil
- 145g Pasta (Tortiglioni)
- The zest and juice of half a lemon
- Handful of nuts (I used walnuts)
- Salt and pepper to taste
- 1 garlic clove
- A couple of basil leaves
- Around a tablespoon of Parmesan cheese if you have it – optional as tastes just as good without
- 50g of smoked salmon
Step by Step Instructions
Step 1
Cook pasta as per packet instructions
Step 2
Blend all ingredients (minus the salmon and pasta) in a blender
Step 3
Stir through cooked pasta, adding a little pasta water if too thick, then add small strips of smoked salmon and stir those through too.
Step 4
Finish with a squeeze of lemon / some red pepper flakes and you’re good to go. You could also add some cherry tomatoes / whatever other veg you have lying around for even more goodness!
